The 3 star restaurant "Troisgros" is in Roanne, and is worth a trip for lunch or dinner. You could also stay at their hotel, but of course you'll pay dearly for the pleasure. We opted to stay at the much more reasonable Le Grand Hotel, and splurge on lunch at Troisgros. (Another option would be to stay in Lyon, which is about an hour by car or train from Roanne.) The meal was, of course, a wonderful experience. Not only was the food heavenly, the staff was wonderful. Chef Michel Troisgros came out before the meal and personally greeted the guests at each table, then returned to the kitchen to create his magic. You can opt for a wine pairing, or wine by the bottle (with some half bottles available also). The theme of the month seemed to be seafood and citrus; five of the 6 dishes that were not cheese or dessert were seafood. The cheese selection was impressive, with many local selections, and the desserts and chocolates were delightful.
